Oatmeal buns (cold rise)
Method
- Pour the cold water and yeast into a 3-litre mixing bowl.
 - Add the rest of the ingredients and mix well by hand with a sturdy mixing spoon.
 - Scrape the sides of the bowl with a wet spatula/dough scraper and sprinkle the seeds or kernels over the top of the dough (optional).
 - Cover the bowl with clingfilm and let it rise in the fridge for at least 8 hours and preferably overnight.
 - Preheat the oven to 190 degrees.
 - With a wet spoon and a wet hand, shape the dough into balls and place them on a baking sheet lined with parchment paper.
 - Put the buns directly into the hot oven. Option: Pour a cup of water into a baking tray at the bottom of the oven to create steam.
 - Bake the buns for 20 minutes and let them cool on a wire rack.

100g oatmeal
200g graham flour
320g wheat flour
10g salt
Seeds/kernels for topping (optional)
