Oatmeal buns (cold rise)

Method

  1. Pour the cold water and yeast into a 3-litre mixing bowl.
  2. Add the rest of the ingredients and mix well by hand with a sturdy mixing spoon.
  3. Scrape the sides of the bowl with a wet spatula/dough scraper and sprinkle the seeds or kernels over the top of the dough (optional).
  4. Cover the bowl with clingfilm and let it rise in the fridge for at least 8 hours and preferably overnight. 
  5. Preheat the oven to 190 degrees.
  6. With a wet spoon and a wet hand, shape the dough into balls and place them on a baking sheet lined with parchment paper.
  7. Put the buns directly into the hot oven. Option: Pour a cup of water into a baking tray at the bottom of the oven to create steam.
  8. Bake the buns for 20 minutes and let them cool on a wire rack.

100g oatmeal

200g graham flour

320g wheat flour

10g salt

Seeds/kernels for topping (optional)
