Waffles
Method
- Combine flour, sugar, vanilla sugar and lemon zest in a 2l Margrethe bowl.
- Combine milk and egg yolks in a mixing jug, then whisk into the flour mixture a little at a time until the flour has completely dissolved without lumps.
- Let the batter rest for 20 minutes.
- Melt the butter and stir it into the batter.
- Whisk the egg whites until stiff, adding salt while whisking.
- Fold the stiff egg whites into the batter.
- Cook the waffles in a hot waffle iron seasoned with a small amount of oil for the first waffle.

½ lemon (finely grated zest)
300g milk
200g buttermilk
2 eggs (divided into yolks and whites)
1 pinch salt
50g butter
