Classic Crisp Waffles
Method
- Whisk the egg yolks with the sugar and vanilla until pale and slightly thickened.
- Stir in the milk.
- In a separate bowl, combine the flour, cornstarch, baking powder and salt.
- Fold the dry ingredients into the batter until just combined.
- Stir in the melted butter.
- Whisk the egg whites until soft peaks form and gently fold them into the batter.
- Allow the batter to rest for 10–15 minutes.
- Cook the waffles in a hot waffle iron until golden and crisp.
Ingredients
2 eggs, separated
25 g sugar
1 tsp vanilla sugar or vanilla extract
3 dl milk
200 g all-purpose flour
10 g cornstarch
1 tsp baking powder
½ tsp salt
75 g butter, melted and slightly cooled
