Classic Crisp Waffles

Method

  1. Whisk the egg yolks with the sugar and vanilla until pale and slightly thickened.
  2. Stir in the milk.
  3. In a separate bowl, combine the flour, cornstarch, baking powder and salt.
  4. Fold the dry ingredients into the batter until just combined.
  5. Stir in the melted butter.
  6. Whisk the egg whites until soft peaks form and gently fold them into the batter.
  7. Allow the batter to rest for 10–15 minutes.
  8. Cook the waffles in a hot waffle iron until golden and crisp.

2 eggs, separated

25 g sugar

1 tsp vanilla sugar or vanilla extract

3 dl milk

200 g all-purpose flour

10 g cornstarch

1 tsp baking powder

½ tsp salt

75 g butter, melted and slightly cooled
